So many delicious recipes call for a can of cream of chicken soup. Things like green bean casserole and cheesy potatoes use canned soup as a shortcut, and it isn't always easy to know what to use instead.

Having a simple recipe for homemade gluten free cream of chicken soup will make your life and your cooking for holidays and homemade meals so much easier.

This recipe for gluten free cream of chicken soup only takes 20 minutes to make in one pan on the stove. Make it ahead of time and keep it in the fridge until you're ready to cook with it.

INGREDIENTS IN GLUTEN FREE CREAM OF CHICKEN SOUP

Butter - To make a thick cream of chicken soup, we'll start by making a roux. Melted butter is the first step.

Gluten Free Flour Blend - Any type of gluten free baking blend will work here. Flour works with the butter to thicken the soup.

Chicken Stock - Stock from a box, can, or homemade can be used in this recipe. Check that your store bought stock is gluten free.

Milk - A cream soup needs a creamy element. Regular milk does the job perfectly here. I suggest 2% or whole milk for best results.

Salt - You can control the amount of sodium in your homemade soup, because canned soups typically have way too much. Start with the amount listed in the recipe, and add more if desired.

Garlic Powder -  I love the warm, savory flavor of garlic in just about anything.

Onion Powder - Onion powder works well in recipes that benefit from onion flavor but don't require actual onions.

Black Pepper - A bit of freshly ground black pepper adds visual interest and a bright kick of mild spiciness.

Chicken - Use already cooked chicken in this recipe, either leftovers or chicken that you've boiled or poached. I like to use breast meat, but pieces from legs or thighs will work as well. Dice or tear the chicken into very small pieces.

HOW TO MAKE GLUTEN FREE CREAM OF CHICKEN SOUP

  1. In a medium saucepan, melt the butter over medium heat.
  2. Add in the gluten-free flour blend and whisk constantly until combined. Cook an additional 1-2 minutes, until the mixture is bubbling.
  3. Gradually add in the chicken stock while whisking.
  4. Add in the milk, and whisk until incorporated.
  5. Then add the salt, garlic powder, onion powder, and black pepper. Whisk to combine.
  6. Bring to a simmer. Continue cooking, whisking occasionally, until the soup has thickened. Add in the cooked chicken.
  7. Stir to combine.
  8. Serve immediately, or store in a jar or container in the refrigerator for later use.

GLUTEN FREE CREAM OF CHICKEN SOUP RECIPE TIPS

To make a vegetarian version of this soup, omit the chicken and use vegetable stock in place of the chicken stock.

You can also make a dairy free cream of chicken soup using a butter alternative like Earth Balance and an unsweetened non-dairy milk such as almond or soy milk.

While cream of chicken soup is usually used in casserole recipes, it is also delicious eaten as is for lunch or with dinner. Garnish with fresh parsley before serving.

HOW LONG IS HOMEMADE SOUP OK IN THE FRIDGE?

This soup should stay fresh for up to 3 days if properly stored in an air tight container in the refrigerator. Freezing this soup will change its texture, so I don't recommend it.

IS CAMBELL'S CREAM OF CHICKEN SOUP GLUTEN FREE?

At the time I am writing this post, none of Campbell's soups in the US are gluten free. Campbell's condensed cream of chicken soup includes wheat flour and yeast extract, making it not a safe option if you are eating gluten free.

WHAT BRAND OF CREAM OF CHICKEN SOUP IS GLUTEN FREE?

It's not easy to find a ready made gluten free cream of mushroom soup. Actually, in the time it took me to research which brands are gluten free, I could have made this homemade cream of chicken soup instead!

Pacific Foods Organic Cream of Chicken Soup is gluten free, and could work in recipes in a pinch. I haven't tried it personally, and reviews on line are a bit mixed.

Great Value Cream of Chicken Soup is certified gluten free by the Beyond Celiac and is a good option if you don't want to make your own soup and you happen to shop at Walmart for groceries.

Mom's Place Gluten Free Cream of Chicken Soup Mix is a powdered soup mix that you add milk to to create a soup.

I suggest making your own  homemade gluten free cream of chicken soup to use in recipes. The flavor will be much better and it only takes about 20 minutes to make from scratch.

WHAT'S THE DIFFERENCE BETWEEN CHICKEN STOCK AND CHICKEN BROTH?

While they are mostly the same thing, chicken stock and chicken broth are made differently. Stock is made from chicken bones, making it slightly thicker with a richer flavor. Chicken Stocks marketed as "bone broth" generally contain extra nutrients from the simmering bones.

Chicken broth is made from cooking meat with vegetables to make a chicken flavored broth. For most soup recipes, these two products can be used interchangeably. You may get a richer flavor from a stock than you would from a broth, but overall they are similar enough that you won't notice much of a difference.

I prefer to use chicken stock to make my gluten free cream of chicken soup, I find that the chicken flavor is more pronounced.

  • This soup is great for recipes like casseroles that call for cream of chicken soup in them.
  • If you are using this soup in a casserole, you can omit the cooked chicken if you prefer.
  • To make this recipe vegetarian, omit the chicken and switch the chicken stock for vegetable stock.
  • To make this recipe dairy-free, use a butter alternative like Earth Balance buttery spread and use unsweetened non-dairy milk, like almond milk or soy milk.
  • If you plan on serving this soup as a meal, I highly recommend adding in some chopped parsley for freshness.
